Easy Peasy Pork Chop Dinner

This is one of our favorite things to eat for dinner - grilled pork chops, roasted asparagus, and brown rice. It's super simple to throw together, tastes delicious, and is not too shabby for your health, either.

Gaghen Family Pork Chop Dinner

4 center cut pork chops (I pound them down a little with a meat tenderizer)
Pork marinade (our absolute favorite is KC Masterpiece Honey Teriyaki)
1 bunch asparagus
1 cup brown rice
2 cups low sodium chicken stock
1/2 cup sliced almonds (we love Almond Accents)

Combine pork chops and desired amount of marinade in plastic container or bag and place in refrigerator for at least 30 minutes. Grill until perfectly done.

Break off ends of asparagus at their natural breaking points. Spread out onto sheet pan. Sprinkle with 1-2 Tablespoons olive oil and salt and pepper to taste. Toss with your hands to coat asparagus. Roast at 350 for 10-15 minutes until tender, yet crispy.

Bring chicken stock to boiling and add brown rice. Lower heat and simmer according to package directions. I like to serve ours sprinkled with sliced almonds (which are also great on fresh green beans and salads).

This meal can serve up to four people.
